A grill house that grew a five star room without losing the uncle.

Uncle Grill House is a Banani restaurant built around live charcoal, a printed kitchen ticket, and a family that still salts the meat. This page is the long story: the yard, the pass, the rooms, and the people who keep the grate honest.

ORIGIN

It started as Friday beef in a family yard.

The uncle ran a drum grill behind a Banani house when Road 11 still felt like a neighbourhood rather than a reservation list. Beef came from a trusted butcher in Kawran Bazar. Lamb came up from the hills when the roads allowed. Fish came when the cooler arrived before the heat did.

People stayed later than they admitted. They brought cousins. They asked if the uncle would do a whole goat for Eid. He said yes, then built a second grate so the goat did not steal the Friday steaks.

The five star room is the third version of that yard. Architects wanted to hide the pit. He refused. Guests now sit close enough to see the tickets move. That is not rustic branding. That is quality control you can watch.

KITCHEN

Butcher first. Fire second. Sauce last, if at all.

The butcher’s block is the loudest station after the pit. We break down ribs, age the house ribeye, and mince seekh to order so the fat stays cold until it hits the skewer. A pretty mince that sat in a fridge overnight is a different food.

Spice is toasted. Mustard seed is popped in ghee. Chili oil is smoked, not dyed. If a guest asks for a British peppercorn sauce we can make it, but we will also put the un-sauced cut on the table so they can taste the fire without it.

Allergies and faith-based requests go on the ticket in red pencil. Cross contact is a briefing, not a shrug. The same discipline that keeps a steak pink keeps a prawn off a vegetarian plate.

FLOOR

Five star is remembering the ice, not whispering.

We train the floor to speak plainly. Doneness, spice, wait times, and whether a dish is meant to share. A guest should not need a glossary to eat here.

Sommelier notes are short. Pairings are written as food sentences: this red stands up to marrow, this lager cuts the seekh fat, this tea is for the person who is driving back to Gulshan.

Private events get a printed menu and a named captain. We do not outsource the fire to a banquet kitchen on the other side of the city. If Uncle Grill House is on the card, the pit in Banani is the pit that cooked it.
